Potato Gratin with Truffle Infused Olive Oil 8 ounces cheddar cheese. 3 pounds potatoes peeled and cut into 1/8 thick slices. Freshly ground salt and pepper 1 1/2 cups crème fraiche 1 tablespoon black truffle infused oil Preheat oven to 400F.Butter a 9 -inch x 13 inch baking dish. Shred cheddar cheese using grater. Place 1/2 the potatoes over lapping slightly, in prepared baking dish. Salt and pepper slices. With a spatula, spread 1/2 the crème fraiche over the potatoes. Then spread 1/2 the cheddar over the crème fraiche. Make a second layer using the remaining ingredients. Bake potato gratin on center rack of oven, uncovered for approximately 30 minutes. Then lower heat to 350 d F, and bake approx another 30 minutes, or until potatoes are tender when pierced with a knife. Potatoes will have a golden brown crust on top. NOTE cover with al-foil if they become to brown. Remove from oven and let stand 10 minutes. Drizzle with truffle infused oil and herbs just before serving. Makes approx 8 serves. Truffled Mashed Potatoes 4 pounds white potatoes peeled, diced. 1 cup cream. 1/2 to 1/3 butter, room temp. 1 tablespoon of black truffle infused oil. Fresh ground pepper and salt. Simmer potatoes in large pot of boiling salted water, about 20-30 minutes until tender. Remove from heat and drain. Return potatoes to heat until excess moisture evaporates, about 1 minute. Remove from heat. Mash potatoes, until no lumps blend cream slowly, until potatoes are fluffy. Add butter and truffle infused olive oil. Season to taste with salt and pepper. Transfer to serving dish and serve. Makes 6-8 servings. Truffled Eggs on Toast 4 English Muffins or thick slices of bread. 8 egg yolks. 8 ounces of Swiss cheese or Gruyere ( or other mild semi-hard cheese) sliced thinly. 1/4 grated parmesan cheese 1-2 tablespoons of truffle infused oil. Asparagus spears cooked and sliced. Preheat oven to 450 degrees F. Lightly spray baking sheet with olive oil. Hollow out an indentation in each bread slice large enough to hold 2 egg yolks. Leave sufficient cushion of bread surrounding the indentation to stop leakage. Place bread on baking sheet. Place 2 egg yolks in each bread indentation. Place slices of cheese over the entire slice of bread, to the edges). Place the bread in the oven and bake for 12 minutes. During the last 2 minutes baking, place grated Parmesan cheese on top of each toast. Remove from oven and using a spatula, place each bread slice on a plate. Lightly drizzle with the truffle infused oil. Serve immediately with salt and pepper. |
